Sparkling Brut of Sanchirico is produced from chardonnay grapes coming from the farm land of Salice Salentino. After careful harvesting and selection of grapes, which took place in August, they are subjected to a soft pressing to obtain a delicate and fragrant wort, then fermented at controlled temperature for about 15 days. The wine has rested in the cellar in stainless steel tanks at a constant temperature of 12 ° C and then passed to the sparkling wine that was made in 50-hl autoclave for a period of 9 months allowing full fusing of the yeasts. Finally the wine is bottled to rest another month before being placed on the market.
This sparkling charmat method has a brilliant straw yellow color with greenish reflections, it has a fragrant scent, delicately fruity, with light notes of tropical fruits and the taste is fresh, harmonious with a delicate fruity closure.
