Fiocco Fiano Salento PGI is an excellent white wine produced by Agricola Fabiana in the land of Manduria. It is produced from Fiano grapes grown in the countryside of Faggiano near the Ionian Sea in vineyards at about 100 m above sea level with very high average temperatures and a particularly low rainfall. The soils are medium-clayey grained.
The vineyard implanted with the espalier system is composed of an average density of about 4600 vines per hectare with an average age of vines around 10 years. The vineyard gives an average yield of about 110 quintals per hectare. The grapes are harvested in the last ten days of August, and after harvesting by hand, the selection of the best bunches, and pressing and destemming follows a pre-curing cold for 24 h and then the subsequent fermentation in steel at a controlled temperature of 12-14 ° C
Fiocco is a wine produced with Fiano grapes with a straw yellow color with golden reflections, an intense, floral and fresh scent. On the palate it is gratifying and balanced, with the right balance between freshness and softness.
