Made from Chardonnay grapes grown in vineyards in the Maìme Estate in S. Pietro Vernotico (80%) and Bocca di Lupo in Minervino Murge (20%). The Chardonnay grapes harvested at technological maturity are immediately crushed in cellar. After gentle pressing, the wort is cooled and maintained at a temperature of 10 ° C, for about 24 h, so as to obtain a natural decantation. The must thus clarified is later fermented with selected yeasts in stainless steel tanks at a temperature of 16 ° C, so as to enhance the aromas of the grapes. Then the wine aging is continued in steel tanks until bottle.
Characterized by a light yellow colour with green reflections. It has a fruity perfume, with hints of apple and citrus zest, and delicately floral, with notes of hawthorn, acacia. At the palate it exudes a fresh, fruity and well balanced taste with slightly balsamic aftertaste. Serve at a temperature of 10-12 ° C.
