Blum from Ognissole winery, is a wine made from a native grape grown only a few kilometers from the Ionian Sea. With its sparkling light and sweet, it is an affordable, easy to drink, with a low alcohol content. It has only 5.5 percent alcohol and be appreciated at best served cold. This particular wine is produced with freshly picked grapes undergo a soft pressing. This allows you to use only the most aromatic part of the grape juice, the one contained in the outermost part of the berry. We collect the must in stainless steel tanks and we keep it at a temperature of -3 ° C, in this way the wort will not ferment.
The fermentation is carried out by transferring the wort in autoclaves where part of the fermentation, activated by raising the temperature and allowing the natural yeasts to start the transformation of sugar into alcohol. When constructing a perfect balance between acidity, sugars and alcohol, the temperature in the autoclave is lowered and the interrupted fermentation. The pressure in the autoclave is ca. 2.5 bar. The sugar content in the bottle is ca. 90 g / L. Carbon dioxide present in the fermentation tank is transferred into the bottle and allows you to be sparkling.
Blum shows a straw yellow color with greenish reflections; perlage. Its aroma has a very delicate bouquet: small flowers, white peach and Mediterranean herbs. Intense, elegant, persistent. Sweet sensations are well balanced by acidity and pleasant fruity aromas.
