Amaluna is an extra dry brut blanc de noirs sparkling wine made from Negroamaro grapes vinified in white and sparkling with the Charmat method by Cantina Due Palme.
The vinification begins with the Negroamaro grapes which are harvested at the end of August in order to preserve freshness and acidity. Upon arrival in the cellar, the grapes are de-stemmed in a soft way; the flower must obtained by pressing undergoes a static clarification, and then the yeasts are inoculated. The alcoholic fermentation takes place in steel tanks at a controlled temperature of 13 ° C for 40 days. Subsequently, the sparkling wine is subjected to a refrigeration of -4 ° C to allow the precipitation of the excess tartrate salts. After 2/3 days, isobaric bottling is carried out.
Amaluna presents a brilliant straw yellow color, with a white and creamy froth, with a fine and delicate perlage. The nose prevails floral aromas, with characteristic fruity notes, in particular white peach, banana and pineapple, kiwi and cedar peel. In the mouth it is soft, sapid, full and balanced, but at the same time dry, thanks to its pleasant acidity and its mineral notes.
