Alticelli its a white wine made with Fiano grapes grown in the territory of Guagnano (Lecce) and harvested in mid-September. After crushing and de-stemming, the must is left in contact with the skins for a period of maceration of about 24 hours at a temperature between 5 and 8 ° C in order to extract the best primary aromas that characterize the typicality of this vine and, at the same time, limiting the extraction of tannins. After racking, the must is fermented at 14 ° C in stainless steel tanks until the end of alcoholic fermentation.
Characterized by a green tint on a straw bottom that forewarn the backbone of freshness and tenacity of this wine. Fruity scent of ripening and the exotic is interspersed with a delicate floral, until crisp herbaceous. On the palate this wine proposes in the mouth the fruit and the flower; the strong acidity prolongs the taste sensations, giving it a remarkable persistence.
