Acine is a white wine produced from Verdeca grapes grown in the countryside of Guagnano on calcareous and clayey soils of medium texture ideal for the production of the typical white Salentino grape variety. This wine has a straw yellow color with greenish reflections, on the nose it has an average fruity bouquet with hints of green apple and on the tropical fruit finish. In the mouth it is balanced and has a pleasant freshness and acidity that make it pleasantly drinkable.
The grapes grown in espalier with a density of 4800 plants per hectare are harvested manually in the first ten days of September, collected in boxes and brought to the winery for white vinification with destemming followed by a soft pressing followed by fermentation with a temperature of 10 °C. Once the fermentation is over, it is left to rest in stainless steel tanks and then bottled.
