Zimara is a wine produced by Agricola Sanchirico with grapes coming from vineyards owned by Salice Salentino (Lecce). The grapes are harvested manually in September and carefully selected before pressing. The grapes were in contact with the skins for 12/18 hours at low temperature; the blackberry is then separated from the skins and left to ferment at a controlled temperature of 12 ° C in stainless steel tanks.
Zimara has a light pink color with slight coral and orange reflections. Its scent is intriguing fruity with hints of pomegranate and floral notes of red rosellines and on the palate it is fruity, fresh, harmonious and rightly salty with saline and mineral underlining in closure.
