Rosa del Sud is a great pink interpretation of the prince vine of Manduria, the Primitivo. This rosé wine is a wine with a strong identity character, enclosing all the power and aromas of the Primitivo that explode with their power to the nose giving floral scents and fresh Mediterranean fruits. In the mouth, however, it knows how to keep itself more harmonious and balanced. Fresh slightly acidic and very savory, it gives pleasant sensations softened by a good presence of glycerin which balances an important alcohol concentration. Enveloping and pleasant sensations in the mouth can be absolutely pleasant and cool in the summer but can give emotions and great sensations even in winter accompanying a good dish based on meat and vegetables typical of Salento.
The harvest is carried out in the third decade of August with a manual harvest in boxes. After the necessary destemming of the bunches with partial break of the grapes, the mass of the must stops for 12 hours in steel containers to macerate for an optimal extraction of the coral pink color and of the aromatic polyphenols from the skins. From the must takes the traditional recovery of the first flower (about 30% by volume) for static dripping and then starts the start of alcoholic fermentation with selected yeasts. Fermentation for about twenty days at a controlled temperature of 14 ° C. Transfer and maturation of the new wine on thin lees, with periodic batonage, for about 4 months. Filtration, bottling and rest for a few months in bottle before being released for consumption.
