The Negroamaro rosè produced by the Azienda Agricola Santi Dimitri, is produced using grapes coming from the land between the agro of Cutrofiano and that of Galatina on clayey-sandy soil with the spurred cordon rearing technique. The density of the plants is about 4000/ha and the yield is around 8000 Kg/ha. Harvesting takes place in the early hours of dawn in the second week of September, in slight anticipation of the natural maturation of Negroamaro to increase acidity and freshness in grape berries. The vinification takes place with the technical characteristic of Salentina a Lacrima with a short cold maceration on the skins followed by soft pressing under vacuum, and then the fermentation carried out at 15 °C and at the end of the process with a cold clarification. The wine ages for a few months in steel and bottle before being put on the market. Due to its typical characteristics of the Rosato del Luca, this wine lends itself to aging for several years with a capacity for evolution that reaches even 6/7 years.
The Rosé Negroamaro of the Azienda Agricola Santi Dimitri presents all the characteristics of the typical Salento rosé with a pink color that tends to orange, a freshness an acidity and an incredible body. Never intrusive and elegant aromas of ripe fruit and in the mouth an explosion of freshness and flavor with a slightly bitter finish that immediately makes you want another sip.
