Made from grapes of Negroamaro and Malvasia Nera Leccese, cultivated with the traditional sapling system in the most typical area of Salento, specifically in the towns of Tuglie, Sannicola, Alezio (LE), on clay soils, of middle structure. The grapes are picked up by hand in early September. The wine is made by the traditional method “a Lacrima (Tear)”. The grapes are left to macerate for about 16 – 18 hours depending on the ripening, and then on the colour. At the time of drawing off only 25-30% maximum is intended for the production of the “Mjere” Rosè. Only the best part, that bright coral pink colour obtained from the Alzata del Cappello, is intended for controlled fermentation temperature at 18 °C. The duration of the fermentation is about 7-8 days and, once completed, the product is transferred into stainless steel tanks and left to rest on its yeasts, for the right time.
Characterized by a pink intense coral colour, brilliant. It has an intense bouquet scent, memory of cherries and fresh, delicate fruit. At the palate it is soft, elegant and persistent fruity, rightly tangy. Serve at a temperature of 12-14 ° C
