Made from Negroamaro grapes harvested in the countryside of Copertino (Lecce) on clay soils of varying composition located above the hard limestone or tuff rocks, of medium fertility on a flat area, 30 to 60 m above sea level. Cultivation system based on sapling from Puglia. The grapes are harvested in the first or second week of September depending on the vintage. The whole grapes are vinified in a condition at a temperature of about 10 ° C before pressing. The maceration of the harvest without stalks lasts about 24 hours. The thermal control of the fermenting wort is adjusted to 15-16 ° C.
It is characterized by a red coral, bright colour, with cherry undertones. At the nose it reminds of flowers, with red fruit nuances. At the palate it is pleasant, crisp and of good freshness. Serve at a temperature of 10-12 ° C.
