Calafuria is a rosé wine produced with Negroamaro grapes in vineyards cultivated in the Tenuta Maìme in San Pietro Vernotico (BR). The grapes are harvested in the first week of September are hand-selected, gently de-stemmed and softly pressed. The must obtained is placed in stainless steel tanks at a temperature of 10 ° C, in order to obtain a natural decantation. Subsequently the alcoholic fermentation takes place which is carried out at low temperatures (16 ° C) to keep the primary aromas intact. It follows a short period of aging in steel and 4 months of aging in bottle.
The rosé from Negroamaro del Salento Calafuria is characterized by a pink peony color, it has an intense and delicate aroma, the fragrant notes of peach and grapefruit and floral notes of violet stand out. In the mouth has a soft entry which is followed by a pleasant acidity followed by an excellent acidity balance from a great flavor and a good aromatic persistence.
