Aka is a wine made from grapes harvested manually by vineyards of 20 – 40 years old cultivated sapling on calcareous soils tufaceo medium dough and located in the area of Manduria. The vinification is done in red and starts with the grape harvest in late August, after the soft collection and destemming of the grapes is carried out by a show of hat for 12 hours and to follow up with thermo-controlling fermentation in stainless steel vats. The wine is then aged in the bottle. The wine to an organoleptic test shows coral pink color, crystal clear, anticipates the good structure of the wine. The bouquet is characterized by a fruity fragrance that expresses with a strong intensity of red apple aromas, fresh wild strawberries and raspberries. On the palate the taste is dry, it gives a pleasant pseudo feeling, soft with a touch of freshness and a perceptible taste – olfactory persistence prolonged, a wine definitely ready.
