This Brindidi DOC produced in the Flaminio Tenuta in Brindisi (belonging to the company Agricole Vallone). After the grape harvest made manually or mechanically, follows the harvest in mid-September. It is made with temperature-controlled fermentation for 7-10 days and a short maceration post-fermentation. A spontaneous malolactic fermentation is thus obtained at the end of alcoholic fermentation. Aged in stainless steel tanks with a short resting for 3-6 months in barrels of 50 hl Slavonian oak and staying for 12 months in cement tanks. Bottle aging: 5-6 months.
It’s characterized by a strong ruby red with violet hues; by aging it assumes grenade veins. It has a strong smell and complex, with fruity and spicy notes. Its taste is elegant, harmonious and smooth, with a full character and good vigour.
