After a long two-year break, we celebrate the return of wine that has always experienced the “variation” of grapes. A rest needed for a wine that, since 1999, has agreed over the years with several vines: Negroamaro, Cabernet Sauvignon, Montepulciano; then the variation from Montepulciano to the Merlot, until its third Merlot life in purity.
Varius, in this version, refers to the dense cultural richness of a long-forgotten Salento culture crossroads, colored by the intense agreement of Susumaniello, a Dalmatian vine whose name derives from the characteristic load of grape bunches in youthful age (like a somnolot) – which decreases over the years with very low yields – and Negroamaro.
The new Varius presents another novelty: the closure with a glass stopper. A choice for those who ask for practicality but elegance. A solution that ensures a good seal and allows wine to mature properly.
“The only constant is the pleasure of variation.” It is the claim used to launch the return of this bottle. The advertising campaign concept is easy to interpret: recall the many lives of Varius and tell its current potential in the native version. The result is the uniqueness of a wine that, ultimately, tells one constant: the way of experimentation and propositional change, that is, the exercise of a pleasure.
Produced with Susumaniello and Negroamaro grapes grown on a corded cordon spurry in the territory of Guagnano (Lecce). Grape harvest takes place in mid-September. Maceration and fermentation start at a low temperature and then reach 24 ° C. In the first days of maceration, delestage daily papers are made, after about 6-8 days. After malolactic fermentation, it is refined in steel tanks and bottles.
Featuring an intense ruby red color with soft purple reflections, the nose features a Bouquet made of red fruits, currant and plum. Perfectly identifiable also ink, cherry, thyme and, in the final, the focaccia. The taste is characterized by a good tasting balance between softness and alcoholicity. Soft tannins, with good freshness and great pleasure to drink.
