The grapes used for the production of Tenuta Paraida come from vineyards with plants of about 40 years cultivated with the Apulian sapling method. The grapes are harvested by hand towards the end of September and after the decimation and pressing is started the classic vinification in red, with the must remaining in maceration with the skins for 6-8 days in order to obtain a large body wine color and fragrance. The fermentation temperature is maintained between 26 and 28 ° C. The wine is then left to be hardened in oak barrels for 6 months and finally ends its path with a further aging in the bottle.
Tenuta Paraida rosso is an intense ruby red wine with a complex bouquet of vanilla, locust beans, berries and spices with aroma of ripe berries and spices. The taste is dry with bitter, velvety, savory, generous aftertaste.
