Es of Gianfranco Fino is a wine out of scheme and over the top. A wine in a limited and numbered edition that enhances the features of the noble grape of Primitivo di Manduria, thanks to the wise use of strong solar radiation and to the characteristic red soil of Salento.
To produce this wine farmers make little use of chemicalproducts in the field, preferably using hedging products to fight the major vine illnesses, mowing of hurt weeds, no watering and no fertilizers. The harvest is done with a slight drying of the grapes on the plant, harvested by hand in plastic boxes with careful selection of grapes, transport on trucks with isothermal cell.
In order processing in the cellar provides a selection of table sorting, dirraspatura, gentle pressing of the grapes, maceration in stainless steel vats of 70 hl, must contact the skins for two to three weeks, temperature control of the marc hair, 2 delestage per day. Daily batonnage until the first decanting. After about 9 months of aging in wood the wine without the use of fining and without tartaric precipitation it is bottled and after 9 months of aging are released for consumption.
