Ognissole Primitivo di Manduria is produced exclusively from grapes from the estates owned by the company site in Fragagnano seal (TA), near Manduria. The land where they grow the plants is limestone mixed with tuffaceous layers of medium consistency.
The grapes are fermented in steel tanks at a controlled temperature and maceration is carried out at a temperature not higher than 26 ° C, it takes place over 8-10 days. The malolactic fermentation was completed by the beginning of winter. Subsequently, the wine is further refined steel for a period of about 3 months and, after bottling, remains in the bottle for 2 months before being put on the market.
Primitivo di Manduria Ognissole nose reveals fruity notes of blackberry and cherry, as well as a certain spiciness. The taste is warm, rich and velvety.
