Piluna is a wine made from Primitivo grapes from vines planted at apulian sapling and Guyot systems on deep, dry clay soils with the presence of tuff limestone, in the territory of Salice Salentino near Lecce. The harvest is done only by hand from dawn until nine in the morning when the temperature is cooler. Wine production at a controlled temperature with about two weeks of maceration and frequent pumping over. After the malolactic fermentation takes place, a part of the wine matures for 6 months in French oak barrels and at different roasting, while the rest remains in steel tanks.
It is characterized by a dark purple colour. It presents a large bouquet of ripe grape, with hints of pepper and vanilla and Mediterranean bush memories. At the palate it expresses a robust flavor, concentrated, soft but firm with gentle aftertaste of jam of blacks berries and long lingering licorice. Serve at a temperature of 16 ° C.
