Negroamaro Cantele is Made from Negroamaro grapes grown on espaliers in the territories of Guagnano (Le). The harvest takes place in early September; after crushing and de-stemming, the must is macerated with the skins for 6-7 days. The fermentation temperature is kept within the 25-26 ° C. After fermentation, the wine stays in barrels for about 6 months. The aging is done in steel tanks until bottling.
The wine has an intense ruby colour with slight and fleeting purple reflections and at the nose it shows hints of red fruits and a delicate and grassy faint scent, which is mixed to a beginning of ethereal. Purely identifiable the black cherry aroma, red plum, thyme and, late, flint. At the palate the taste is characterized by a good balance between softness and alcohol content, as opposed to the minerality and freshness. Elaborated the tasting persistence, initially soft, with delicate incisive aftertaste typical of the grape.
