Moros is an extraordinary wine produced by Claudio Quarta winemaker. This award-winning Salice Salentino is made with Negroamaro and Malvasia nera grapes coming from a soil with a predominantly clayey feature with limestone, which extends for a little more than one hectare (ha 1.33) in the fief of Guagnano.
The grapes are harvested in the last ten days of September, with a manual harvest followed by a selection of the best bunches. The yield is about 60 q.l / ha. The wine is then obtained by fast destemming, which is followed by a fermentation that is started with selected yeasts in steel containers of 50 and 100 hectoliters and conducted for about 3 weeks under constant temperature control at 21-23 degrees. Frequent replacements occur during the process. Finally the vinification ends with an aging in steel and wood, in barrels and barriques of French and American oak for about 16-18 months. The wine is assembled 3 months before bottling and aged for 4 months in bottle before being marketed.
Its particularly captivating scent has strong notes of vanilla and cherry jam. The taste of red berry fruits with fine balsamic notes and sweet nuances from the wood is marked on the palate.
