Masseria Maimè is a great wine produced by Tormaresca from Negroamaro grapes from vineyards planted on Apulian saplings and spurred cordon in Maìme Estate in San Pietro Vernotico (BR). The grapes were harvested in the third decade of September slightly overripe, so as to enhance their phenolic potential. After crushing, the fermentation took place in stainless steel tanks, at a temperature of 26-28 ° C.The maceration, handled with pumping and soft delestage in order to carry out gradual and balanced extraction, was continued for 15-18 days. After racking the wine is passed directly in barrels of French and Hungarian oak, where it completed the malolactic fermentation, staying there for 12 months before being bottled. Then followed a further period of 12 months of aging in bottle.
Characterized by an intense ruby red colour. It has a floral scent (violet, rose), red fruit (cherry, mulberry), spicy (licorice, anise, cinnamon, cloves). At the palate it exudes a dry and elegant taste with a balanced and soft tannin taste. Serve at a temperature of 18-20 ° C.
