The grapes are harvested in the first ten days of September, and after harvesting by hand, the selection of the best bunches, and the destemming and destemming, the grapes start maceration and fermentation at a controlled temperature of about 20 ° C for few days. The racking follows the malolactic fermentation and the aging in steel for about 6 months.
