Kalema Negroamaro is an extraordinary wine produced by Agricola Fabiana in the land of Manduria. It is produced from grapes grown in the countryside of Faggiano near the Ionian Sea coast in vineyards 100 m above sea level with very high average temperatures and a particularly low rainfall. The soils are medium-clayey grained.
The vineyard partly planted with the Pugliese sapling system and partly espalier is composed of an average density of about 4500 vines per hectare with an average age of grapes ranging from 20 to 40 years. The vineyard gives an average yield of about 120 quintals per hectare. The grapes are harvested in the third decade of September, and after harvesting by hand, the selection of the best grapes, and the destemming and destemming, the grapes start maceration and fermentation at a controlled temperature of about 20 ° C for about 10 days. The racking follows the malolactic fermentation and the aging in oak Tonneau for about 6 months.
Kalema Negroamaro is an intense red wine with garnet reflections. The nose alternates fruity sensations of black cherry and blackberries, sweet spicy notes due to aging in the Tonneau. In the mouth it is soft and balanced with a strong but never intrusive tannin. Persistent finish.
