Graticciaia is the symbol of the Negroamaro from Salento in the world, produced only in special vintages and in limited quantities. Considered by many the best expression of the Negroamaro from Salento.
Careful selection of Negroamaro grapes from an old vineyard bred with sapling. The grapes are prior taken to maturity, then left to dry on racks. The name of the wine derives from ‘Graticciaia’, the fruit cellar where are are the wicker made with woven mats and canes. When the drying is complete, the grapes go to winemaking. The physiological processes that are determined in the grape and the fermentation of the wort in the late autumn, when the environmental temperature is lower, lead to a completely different evolution compared to the traditional wine-making. Wine aged in French oak barrels. The temperature of the wort is strictly regulated throughout the slow process of fermentation and aging is done in small wooden barrels.
