Colomito is the most important wine produced by Agricola Sanchirico. A wine produced with selected grapes and obtained from carefully managed vineyards. The grapes, from vineyards in Salice Salentino (Lecce), were harvested manually in September and carefully selected before pressing. The must has carried out a long maceration on the skins in stainless steel tanks at controlled temperature for more than 20 days, then to do mallolactic fermentation. The wine thus obtained is refined for 12 months in small barrels, then bottled and completed refining in the bottle for a further 12 months.
Colomito is a Salice Salentino wine, with a beautiful intense ruby color, but with slight garnet reflections. The nose emits a very intense and persistent aroma, fruity with hints of ripe red fruit and in the mouth, with a fine but robust and decisive taste, elegant on the palate, featuring a note of cocoa and tobacco
