Made from Negroamaro grapes grown in rows in the Brindisi area. The harvest takes place from ripe grapes, de-stemmed in a soft way, using new and very delicate processing techniques. During the phase of maceration (about 8 days) in vertical fermenters hermetically closed and saturated with Co2, the wine completes also the alcoholic fermentation at a temperature not exceeding 20 ° C. The wine is then transferred into oak barrels, where it completes the malolactic fermentation and is then subjected to a further four months of aging in wood and then a subsequent aging in bottles.
Characterized by an intense ruby red colour with purple hues. It has a fine, fruity and fragrant perfume. Medium-bodied, the taste is very balanced with good freshness and adequate pseudo-calorific sensations. Serve at a temperature of 12.5 ° C.
