Calidus is an amazing Primitivo wine produced by Agricola Fabiana in the land of Manduria. It is produced from Primitivo grapes grown in the countryside of Faggiano near the Ionian Sea in vineyards at about 100 m above sea level with very high average temperatures and a particularly low rainfall. The soils are medium-clayey grained.
The vineyard, partially planted with the sapiese sapling system, is composed of an average density of about 4,000 vines per hectare with an average age of vines of 45 years. The vineyard gives an average yield of about 90 quintals per hectare. The grapes are harvested in the last 10 days of September, after the late withering on the plant and after hand harvesting, the selection of the best bunches, and the pigiodiraspatura proceeds with a thermocontrolled maceration, followed by racking and soft pressing at the end of fermentation. The wine is finally aged for 4 months in French oak barrels, medium toasted.
