Bocca di Lupo is a great wine produced with Aglianico grapes organically cultivated in vineyards on the estate Bocca di Lupo in Minervino Murge (Ba). The grapes are harvested in the second ten days of October. After crushing, the fermentation takes place in stainless steel tanks, at a temperature not exceeding 25-27 ° C. The maceration, managed with delicate pumping and delestage in order to carry out a gradual and balanced extraction, is continued for 15-18 days. After racking, the wine is passed directly in oak barrels, mostly French, where the malolactic fermentation is completed, remaining there for 15 months before being bottled. Then follows a further period of 24 months of aging in bottle.
Characterized by a dark ruby red color. The wine has a large and intense perfume in which we can smell notes of red fruit, sweet spices and china, with pleasant balsamic notes at the end. When tasted, it exudes a tannic taste, with a great structure, balance and softness, with an extremely long finish. Serve at a temperature of 20 ° C.
