Amativo is a red wine made with Primitivo and Negroamaro grapes grown in the territory of Guagnano (Lecce), Sava (Taranto), San Pietro Vernotico (Brindisi). Sapling growing system, the Primitivo grapes are picked in the first days of September, while those of Negroamaro in late September. After de-stemming and crushing, the must is left macerating with the skins for 12-15 days, during which a daily delestage is carried out. The fermentation temperature is kept within the 26-28 ° C. At the end of the malolactic fermentation, the wine is placed in oak barrels where it stays for about 12 mesi.
Caracterized by a ruby red color. It presents a perfume of pink and violet which are released in a slow and sustained progression, giving way to berries, to dried fig, to jams and vanilla. On the palate the olfactory harmony comes up again, releasing delicate fruity and spicy progressions. The copious and balanced taste in its components makes this wine “indelible”. The extreme softness closes with a retro-olfactory impact, vast and remarkably durable. Serve at a temperature of 18 ° C.
